Fresh Cooking with In-Season Food: Peanuts

Everyone knows that cooking with fresh fruits and vegetables (that are in-season) not only is a great way to stretch a buck, it is also the best way to produce flavorful dishes that will keep your family, friends, guests (whomever) asking for more. This time of year there are many wonderful selections: apples, cabbage, leafy greens, sweet potatoes and pumpkins, to name a few. A quick visit to your local farmer's market, grocery store or fresh produce stand on the corner offers a bountiful harvest of in-season crops. Here, we focus on the ever-popular nut, peanuts. Often thought of as an easy snack for cocktail parties, this nut can be used in both savory and sweet dishes alike! From brownies to salads and the main course, these dishes are sure to be tasty treats that everyone will enjoy!

|Peanut Broccoli Slaw

Ingredients:

16 oz Prepared Broccoli Slaw
1/2 C Raisins
2 Red Apples, cored & chunked
1/2C Peanuts, chopped

Dressing:
2/3 C Mayonnaise
4 tsp Sugar
2 Tb Vinegar
1 tsp Salt
1 tsp Celery Seed

In a small bowl, combine dressing ingredients; set aside. In a serving bowl, combine slaw mix, apples, and raisins. Toss with dressing. Cover and refrigerate several hours. Top with nuts with before serving.
